2 pounds fresh spinach, washed and coarsely chopped
4 tablespoons butter
1/2 teaspoon finely chopped garlic
1 cup finely chopped onions
1 teaspoon salt
1/4 teaspoon white pepper
2 hard-cooked eggs, finely chopped
In a 3- to 4-quart enameled or stainless-steel saucepan, bring the chicken stock to a boil over high heat. Add the spinach; reduce the heat to low, and simmer partially covered for 7 to 8 minutes. Then pour the contents of the pan into a sieve set over a large bowl. Press down hard on the spinach with the back of a wooden spoon to extract all of its juices. Set the stock and the drained spinach aside separately.
Melt the butter in the saucepan and stir in the garlic and onions. Cook over moderate heat for 3 to 4 minutes, stirring frequently, until the onions are soft and translucent. Add the reserved chicken-spinach stock and bring to a boil, then stir in the spinach, nutmeg, salt and pepper. Partially cover the pan and simmer the soup over low heat for about 5 minutes, stirring occasionally. Taste for seasoning and serve at once from a heated tureen or individual soup bowls, garnished with chopped egg.
