American Cooking: The Northwest: Recipes
1 cup dried lentils
1/2 cup finely chopped onions
1/4 cup finely chopped scallions, including 2 inches of the green tops
2 tablespoons finely chopped fresh parsley
1/2 teaspoon finely chopped garlic
2 tablespoons red wine vinegar
1/8 teaspoon Tabasco sauce
1/2 teaspoon freshly ground black pepper
6 tablespoons olive or vegetable oil
1 small red onion, peeled, cut crosswise into 1/8-inch-thick slices and separated into rings
3 hard-cooked eggs, cut crosswise into 1/8-inch-thick slices
In a heavy 2- to 3-quart saucepan, bring 1 quart of water and 1 teaspoon of the salt to a boil over high heat. Drop in the lentils, reduce the heat to low, and simmer partially covered for 20 to 30 minutes, or until the lentils are tender but still intact. Drain them in a sieve or colander, spread them on a double thickness of paper towels and pat them completely dry. Transfer the lentils to a large serving bowl and stir in the chopped onions, scallions, 2 tablespoons of parsley and the garlic.
Combine the vinegar, Worcestershire, Tabasco, pepper and the remaining teaspoon of salt in a small bowl and mix well with a wire whisk. Beating constantly with the whisk, pour in the oil in a thin stream and continue to beat until the dressing is smooth. Pour the dressing over the lentil mixture and, with a fork, toss the salad ingredients together gently but thoroughly. Cover tightly with foil or plastic wrap and refrigerate the lentil salad for at least 30 minutes.
Just before serving, stir the salad briefly and arrange the onion rings and egg slices attractively on top. Sprinkle the salad with the remaining 2 tablespoon of parsley and serve at once.
