Bean Chowder
To serve 8 to 10
2 quarts water
2 cups (1 pound) dried Great Northern, marrow or pea beans
3 tablespoons vegetable oil
2 cups finely chopped onions
1/2 cup finely chopped celery
2 teaspoons finely chopped garlic
2 twelve-ounce smoked ham hocks
6 cups chicken stock, fresh or canned
2 whole cloves
1 medium-sized bay leaf
Freshly ground black pepper

   Bring the water to a boil over high heat in a heavy 6- to 8-quart casserole. Drop in the beans and boil them briskly for 2 minutes. (The water should cover the beans by at least 1 inch; add more if necessary.) Turn off the heat and let the beans soak for 1 hour, then drain them through a sieve into a bowl and return the beans to the casserole. Add 4 cups of the cooking liquid to the beans.

   In a heavy 10-inch skillet, warm the oil over moderate heat until a light haze forms above it. Add the onions, celery and garlic; stirring frequently, cook for about 5 minutes, until they are soft but not brown. With a rubber spatula, scrape the entire contents of the skillet into the casserole. Add the chicken stock, ham hocks, tomatoes, cloves, bay leaf and a few grindings of pepper. Mix well and bring to a boil over high heat. Reduce the heat to low, cover the pan partially, and simmer for 2 hours, or until the ham is tender and shows no resistance when pierced deeply with the point of a thin skewer or sharp knife.

   Transfer the ham hocks to a plate and, when they are cool enough to handle, remove the skin, fat and bones. Cui the meat into 1/4-inch cubes and set it aside. Pick out and discard the bay leaf, then with the back of a spoon rub the contents of the casserole through a fine sieve into a deep bowl, or purée the mixture through the finest blade of a food mill. Skim as much fat as possible from the surface of the soup; taste for seasoning.
