Potato Salad with Bacon Bits
To serve 6 to 8
3 pounds medium-sized boiling potatoes (about 9), scrubbed and unpeeled
1/2 pound bacon, cut into 1/2-inch dice (about 1 1/2 cups)
1/2 cup finely chopped onions
1/4 cup white wine or cider vinegar
1/4 cup water
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 teaspoon dry mustard
2 tablespoons finely cut fresh chives

   Drop the potatoes into enough lightly salted boiling water to cover them completely, and boil briskly, uncovered, until they show only slight resistance when pierced with the point of a sharp knife. Do not overcook. Drain the potatoes in a colander, peel and cut them into 1/4-inch-thick slices. Set aside in a large bowl and cover tightly with foil.

   In a heavy 8-inch skillet, fry the bacon over moderate heat until brown and crisp. With a slotted spoon, transfer the dice to paper towels to drain. Add the onions to the fat remaining in the pan and stir over moderate heat until they are soft and golden. Add the vinegar, water, salt, pepper and mustard and bring the sauce to a boil. Pour the hot sauce over the potatoes, turning the slices with a rubber spatula to coat them evenly. Stir in the bacon and chives and taste for seasoning. Serve at once.
