Salads and Dressings
Yogurt-and-Honey Dressing
To make about 1 cup
1 cup (8 ounces) plain unflavored yogurt
2 tablespoons honey
1 tablespoon finely cut fresh mint leaves
1 to 2 teaspoons strained fresh lemon juice

   Combine the yoghurt, honey and mint in a bowl and beat with a wire whisk until the mixture is smooth. Whisk in 1 teaspoon of the lemon juice, then taste the dressing and add up to 1 teaspoon more lemon juice if desired. Cover tightly with foil or plastic wrap and refrigerate until ready to serve.

   Yoghurt-and-honey dressing may be-served with any fruit salad.
