Chimichangos Dulces
DEEP-FRIED WHEAT TORTILLAS WITH FRUIT FILLING
To make 12 chimichangos
TORTILLAS
4 cups unsifted flour
1/2 teaspoon ground cinnamon
1 teaspoon salt
8 tablespoons lard, cut into 1/2-inch bits
1 cup lukewarm water (110° to 115°)
FILLING
1 cup coarsely chopped dried apples
1 cup coarsely chopped dried apricots
1 1/2 to 2 cups water
1/2 cup granulated sugar
1/2 teaspoon finely grated fresh lemon peel
4 tablespoons butter, softened
Vegetable oil for deep frying
Confectioners' sugar

   To make the wheat tortillas, combine the flour, cinnamon and salt in a deep bowl and, following the directions for wheat tortillas, mix in the lard and lukewarm water. Let the dough rest for about 15 minutes, then divide it into 12 equal portions and roll each one into a round about 7 inches in diameter and 1/8 inch thick. Fry the tortillas in an ungreased skillet and set them aside on a platter to cool.

   Meanwhile, prepare the filling in the following fashion: Combine the apples, apricots and 1 1/2 cups of water in a heavy 1- to 1 1/2-quart saucepan and bring to a boil over high heat. Reduce the heat to low and simmer partially covered for about 20 minutes, or until the fruit is soft and the mixture is thick enough to hold its shape almost solidly in a spoon. (Check the pan from time to time and add up to 1/2 cup more water by the tablespoonful if necessary. When the fruit is fully cooked, however, it will have absorbed most of the liquid in the pan.) Transfer the fruit mixture to a bowl and stir in the granulated sugar and the lemon peel. Set the filling aside to cool to room temperature.

   HOW TO SHAPE A CHIMICHANGO DULCE

   Lay a 7-inch wheat tortilla flat and (1) turn down the top edge to a depth of about 2 inches. (2) Fold up the bottom 2 inches of the tortilla, overlapping the top and creating a band about 7 inches long and 3 inches wide. (3) Mound 2 tablespoons of filling an inch from one edge of the band. Spread a teaspoon of softened butter over the exposed edge at that end of the band, then (4) turn the buttered edge over the filling, covering it completely. (5) Starting at the filled end, roll the tortilla into a cylinder.

   Assemble the chimichangos as shown in the diagrams above, using 2 tablespoons of the filling mixture and 1 tablespoon of the softened butter for each. (At this stage the chimichangos dulces may be wrapped in wax paper or foil and refrigerated for 2 or 3 hours.)

   About half an hour before serving the chimichangos, preheat the oven to its lowest setting. Line a large jelly-roll pan with a double thickness of paper towels and place it in the center of the oven.

   At the same time, pour vegetable oil into a deep fryer or large heavy saucepan to a depth of about 3 inches and heat the oil until it reaches a temperature of 375°. Deep-fry two chimichangos dulces at a time, turning them about with a slotted spoon for 4 to5 minutes, or until they are crisp and golden brown. As they brown, transfer them to the lined pan and keep them warm in the oven while you fry the rest.

   Sprinkle the chimichangos dulces lightly with the confectioners' sugar, arrange them attractively on a large heated platter, and serve them while they are still hot.
