Sourdough Waffles
To make four 11-by-6-inch waffles
1 cup sourdough starter
2 cups warm water (90°)
2 1/2 cups unsifted flour
1 egg, lightly beaten
1 teaspoon salt
1/4 cup vegetable oil
1/2 cup dry milk solids
2 tablespoons sugar
1 teaspoon baking soda

   With a rubber spatula, scrape tl.re starter into a deep ceramic or glass bowl. Give it a quick stir to recombine its ingredients, then add the warm water and stir the mixture to a paste. Stir in the flour, about 1/2 cup at a time. Cover the bowl tightly with plastic wrap and set the mixture aside in a warm, draft-free place (such as an unlighted oven ) for 12 hours. (If the mixture has not bubbled at the end of this time, the starter was dead and the mixture must be discarded.) You should have about 4 cups of sourdough mixture.

   Before preparing the waffles, ladle 1 cup of the mixture into a pint jar to serve as a starter for future sourdough cooking. Cover the jar tightly with its lid and refrigerate the starter until you are ready to use it. Unless the starter is used within 2 or 3 weeks, freshen it as described above.

   With a wire whisk, beat the egg and vegetable oil into the 3 cups of sourdough mixture remaining in the bowl to form a sourdough batter. Combine the dry milk solids, sugar, baking soda and salt in a small sifter, sprinkle them directly over the batter and whisk all of the ingredients together gently but thoroughly.

   Following the manufacturer's directions, preheat an 11-by-6-inch waffle iron to moderate. Pour 1 1/2 cups of the batter into the center of the hot waffle iron, reduce the heat to moderately low and close the iron. Bake for 5 minutes or until the steaming stops and the waffle is golden brown on both sides. (You can peek at the waffle to check it after 3 minutes, but do not open the cover earlier or the waffle may stick to the grid.)

   Serve the sourdough waffles at once, accompanied by butter and maple syrup, honey or jam.
