Lamb and Limas
To serve 6 to 8
6 cups water
1 pound (about 2 1/2 cups) dried Lima beans
3 pounds lean boneless lamb shoulder, trimmed of excess fat and cut into 1-inch cubes
2 teaspoons salt
1/2 teaspoon freshly ground black pepper
1/4 cup flour
1/4 cup vegetable oil
1 1/2 teaspoons finely chopped garlic
2 to 3 cups chicken stock, fresh or canned
1 teaspoon crumbled dried oregano
1/4 teaspoon crumbled dried thyme
1/4 teaspoon crumbled dried rosemary
2 medium sized carrots, scraped and sliced crosswise into 1/4-inch-thick rounds
6 to 8 white onions, each about 1 inch in diameter, peeled
2 medium-sized celery stalks, trimmed of all leaves and cut crosswise into 1/4-inch-thick slices
2 tablespoons butter
1/4 pound firm fresh small mushrooms, trimmed and wiped with a dampened towel

   In a 3- to 4-quart saucepan, bring the 6 cups of water to a boil over high heat. Drop in the Lima beans, boil briskly for 2 minutes, then turn off the heat. Let the beans soak for about 1 hour.

   Meanwhile, pat the cubes of lamb completely dry with paper towels and season the meat with the salt and pepper. Roll the cubes in the flour to coat them on all sides, then vigorously shake off the excess flour.

   In a heavy 7- to 8-quart casserole, heat the oil over moderate heat until a light haze forms above it. Brown five or six of the lamb cubes at a time, turning them frequently with a slotted spoon and regulating the heat so that they color deeply and evenly without burning. As they brown, transfer the lamb cubes to a plate.

   Pour off all but about 2 tablespoons of the fat remaining in the casserole, add the garlic and stir over moderate heat for a minute or so. Then pour in 2 cups of chicken stock and bring to a boil over high heat, meanwhile scraping in the brown particles that cling to the bottom and sides of the pot. Add the oregano, thyme and rosemary, and return the lamb and the liquid that has accumulated around it to the casserole. Reduce the heat to low, cover the casserole and simmer for 30 minutes.

   Drain the Lima beans in a sieve set over a bowl. Measure the bean-soaking liquid and add enough chicken stock to make 2 cups. Add the bean liquid, the beans and the carrots to the casserole, and simmer partially covered f or 10 minutes longer. Stir in the onions and celery and simmer for 15 minutes, until the lamb and vegetables are tender but still intact.

   In the meantime, melt the butter over moderate heat in a small heavy skillet. When the foam begins to subside, add the mushrooms. Stirring frequently, cook for about 10 minutes, or until the liquid that accumulates in the pan has completely evaporated. Do not let the mushrooms brown. Stir the mushrooms into the simmering lamb mixture, and cook for 2 or 3 minutes more. Taste for seasoning. Serve the Lamb and Limas at once, directly from the casserole.
