Chuletas de Carnero con Piñones
LAMB CHOPS WITH PINE NUTS
To serve 4
1/2 cup pine nuts (pignolia)
3 large garlic cloves, peeled and coarsely chopped
2 dried hot red chilies, each about 1 inch long, stemmed, seeded and coarsely crumbled (caution: see note)
1/2 teaspoon salt
2 tablespoons distilled white vinegar
1 teaspoon sugar
1 6-ounce can tomato paste
3/4 cup plus 1 tablespoon olive oil
4 lean shoulder lamb chops, each cut about 1 inch thick

   Place the pine nuts in a small ungreased skillet and, stirring frequently, toast them over moderate heat for 5 to 10 minutes, or until they are golden brown. Transfer 1/4 cup of the nuts to a large mortar or small heavy bowl and set the rest aside.

   With a pestle or tire back of a spoon, pulverize the 1/4 cup of pine nuts. Add the garlic, chilies and salt and pound the mixture to a smooth paste. Stir in the vinegar and sugar, then add the tomato paste and, when it is well incorporated, beat in 3/4 cup of the olive oil, 2 tablespoons at a time. Set the tomato sauce aside.

   Set the broiler pan and rack 4 inches from the heat and preheat the broiler to its highest setting. With a pastry brush, spread the remaining tablespoon of olive oil over the broiler pan rack. Place the lamb chops on the rack and brush each one with a heaping tablespoon of the sauce. Broil the chops for 5 to 6 minutes, turn them over, and coat the top of each one with another heaping tablespoon of sauce. Broil for 5 to 6 minutes longer, or until the lamb chops are done to your taste.

   Arrange the lamb chops attractively on a heated platter and scatter the reserved whole pine nuts over them. Warm the tomato sauce briefly over low heat and present it separately in a small bowl.
