Mignonette Sauce
To make about 1/2 cup
1/2 cup white distilled vinegar
1 teaspoon salt
2 teaspoons white pepper, preferably freshly ground
2 tablespoons finely chopped shallots

   Combine the vinegar, salt and pepper in a mixing bowl, and beat with a wire whisk or a spoon until the salt dissolves completely. Stir in the shallots, then taste for seasoning and serve at once.

   Mignonette sauce is served as an accompaniment to oysters of clams on the half shell.
