Benne-Seed Cocktail Biscuits
To make about 8 dozen 1 1/2-inch biscuits
1/2 cup benne seeds (sesame seeds)
2 cups flour
1 teaspoon double-acting baking powder
1/2 tablespoon salt
8 tablespoons butter, chilled and cut into 1/4inch bars
4 tablespoons 2% milk

   Preheat the oven to 350°. Spread the benne seed evenly in a shallow baking dish and, stirring occasionally, toast them in the middle of the oven until golden brown. Remove from the oven and set the seeds aside.

   Combine the flour, baking powder and salt and sift them into a large chilled bowl. Add the butter bits and, with your fingertips, rub the fat and flour together until they resemble flakes of coarse meal. Pour in the milk and mix until your hands or a spoon r-until the dough is smooth. Then blend in the benne seeds, wrap the dough in wax paper and refrigerate for at least 1 hour before using.

   Preheat the oven to 350°. Cut the chilled dough in half and shape each half into a rectangle. Place one half at a time between two sheets of lightly floured wax paper, and roll out the dough paper thin. Gently peel off the top sheet of paper and, with a biscuit cutter or the rim of a glass, cut the dough into 1 1/2 - inch rounds. Using a metal spatula, carefully transfer the rounds to ungreased baking sheets. Gather the scraps into a ball, shape it into a rectangle and roll ii out between sheets of wax paper as before; then cut as many more biscuits as you can.

   Bake the biscuits in the middle of the oven for 10 to 12 minutes, or until they are a pale golden color. Slide them onto wire racks and at once sprinkle the tops lightly with the coarse salt. Serve the biscuits at room temperature. The benne-seed cocktail biscuit can safely be kept in a tightly covered jar or tin for 2 or 3 weeks. Before serving, warm and crisp them for a few minutes in a low oven (250°).
