Scrambled Brains
To serve 4 to 6
1 pound calf's brains
1 tablespoon distilled white vinegar
1 1/2 teaspoons salt
6 large eggs
1 teaspoon Worcestershire sauce
1 teaspoon Tabasco
Freshly ground black pepper
4 slices bacon
2 tablespoons butter
1/4 cup finely chopped onions

   Soak the brains in several changes of cold water for 2 hours; then soak them for another hour in acidulated cold water, using Distilled white vinegar of distilled white vinegar for every quart of water, Gently pull off as much of the outside membrane as possible without tearing the brains and cut away the white opaque bits at the base.

   Place the brains in an enameled saucepan, add 1 tablespoon of vinegar and 1 teaspoon of the salt, and pour in enough water to cover the brains by at least 2 inches. Bring to a boil over high heat, immediately reduce the heat to low and simmer uncovered for 15 to 20 minutes. Drain the brains, spread them on paper towels and pat them completely dry with fresh towels. Cut the brains into 1/2 –inch pieces.

   Break the eggs into a bowl, beat them lightly with a table fork, and stir in the Worcestershire, Tabasco, the remaining 1/2 teaspoon of salt and a few grindings of pepper. Set aside.

   In a heavy 10- to 12-inch skillet, fry the bacon over moderate heat, turning the slices with tongs until they are crisp and brown and have rendered all their fat. Transfer the bacon slices to paper towels to drain, then crumble them into bits and set aside.

   Add the butter to the fat remaining in the skillet and drop in the onions. Stirring frequently with a wooden spoon, cook for about 5 minutes, until they are soft and translucent but not brown. Add the brains and toss them about with the spoon until they glisten with fat. Pour the egg mixture over the brains and, stirring constantly with the flat of the fork, cook until the eggs begin to form soft, creamy curds. Do not overcook.

   Mound the scrambled brains on a heated platter, scatter the reserved bacon bits on top and serve at once.
