Breakfast Dishes
Hominy Grits Soufflé
To serve 4 to 6
2 cups water
1 teaspoon salt
1/2 cup white hominy grits
1 tablespoon butter, softened, plus 8 tablespoons (1 quarter-pound stick) unsalted butter, cut into bits
1 tablespoon strained bacon fat, or substitute 1 tablespoon lard
4 egg yolks, beaten
Freshly ground black pepper
4 egg whites
1/4 cup dry bread crumbs

   Preheat the oven to 350°. Pour the water and salt into a heavy 1 1/2- to 2-quart pan and bring to a boil over high heat. Slowly pour in the grits, stirring constantly and pouring slowly enough so that the boiling continues at a rapid rate. Stir constantly with a wooden spoon to keep the mixture smooth. Cover the pan tightly, reduce the heat to low and, stirring occasionally, simmer 15 minutes.

   Meanwhile, lightly coat the bottom and sides of a 1 1/2 to 2-quart casserole with the tablespoon of softened butter. Set aside.

   Remove the saucepan from the heat and with a wooden spoon, beat into the grits the butter bits, bacon fat, egg yolks and several grindings of black pepper.

   In a large mixing bowl, beat the egg whites with a whisk or a rotary or electric beater until they are stiff enough to form firm, unwavering peaks on the beater when it is lifted from the bowl With a rubber spatula, fold the egg whites into the hominy grits mixture, then pour it into the casserole, smoothing the top with the spatula. Sprinkle evenly with the bread crumbs and bake in the middle of the oven for 45 minutes, until the soufflé has puffed and the top is golden brown. Serve at once, directly from the casserole.
