6 cups boiling water
4 to 5 cups chicken stock, fresh or canned
3 tablespoons butter
1 1/2 cups finely chopped onions

1/2 cup heavy cream, chilled
Place the dried mushrooms in a deep bowl, pour the boiling water over them, and soak for at least 2 hours or until the mushrooms soft and flexible. Drain the mushrooms through a fine sieve set over a bowl and reserve the soaking liquid. Rinse the mushrooms well under cold running water to remove any remaining traces of sand, cut them into thin slices, and drop them into a heavy 4- to 5-quart saucepan.
To clarify the soaking liquid, line the fine sieve with a double thickness of dampened cheesecloth. Pour in the liquid and strain it through the sieve directly into the saucepan. Stir in 3 cups of the chicken stock and bring to a boil over high heat. Reduce the heat to its lowest setting and simmer, partially covered, for 2 to 3 hours, or until the stock has the intensity of mushroom flavor you like.
In a heavy 8- to 10-inch skillet melt the butter over moderate heat. When the foam begins to subside, add the onions and, stirring frequently, cook for 8 to 10 minutes, or until they are golden brown. Watch carefully for any sign of burning and regulate the heat accordingly.
With a rubber spatula, scrape the contents of the skillet into the simmering soup. In a small bowl, stir the cornstarch and 1 cup of chicken stock together to make a smooth paste. Stirring the soup constantly with a large spoon, pour in the cornstarch mixture in a slow, thin stream and cook over moderate heat until the soup comes to a boil, thickens and is smooth. Taste and season with salt and a few grindings of black pepper. (If the soup is too thick for your taste, thin it with up to 1 cup of additional chicken stock.)
Just before serving, pour the cream into a chilled bowl. With a wire whisk or a rotary or electric beater, whip the cream until it is stiff enough to stand in firm peaks on the beater when it is lifted from the bowl.
Ladle the mushroom soup into individual heated soup plates and top each serving with a spoonful or so of whipped cream. Serve at once.
