Sourdough Pancakes
To make 25 to 30 two-inch pancakes
1 cup sourdough starter
2 cups warm water (90°)
2 1/2 cups unsifted flour
1 egg, lightly beaten
2 tablespoons vegetable oil
1/2 cup dry milk solids
2 tablespoons sugar
1 teaspoon baking soda
1 teaspoon salt
4 to 6 tablespoons butter, melted and cooled

   With a rubber spatula, scrape the sourdough starter into a deep ceramic or glass bowl and give it a quick stir to recombine its ingredients. Add the warm water and stir the mixture to a smooth paste. Stir in the flour about, 1/2 cup at a time. Then cover the bowl tightly with plastic wrap and set the sourdough mixture in a warm, draft-free place (such as an unlighted oven) for 12 hours. (If the mixture has not bubbled at the end of this time, the starter was dead and the mixture must be discarded.) You should have about 4 cups of sourdough mixture.

   Before preparing the pancakes, ladle 1 cup of the mixture into a 1-pint jar to serve as a starter for future sourdough cooking. Cover the jar tightIy with its lid and refrigerate the starter until ready to use. Unless the starter is used within 2 or 3 weeks, freshen it as described on page 137.

   With a wire whisk, beat the egg and vegetable oil into the 3 cups of sourdough mixture remaining in the bowl to form a batter. Combine the dry milk solids, sugar, baking soda and salt in a sifter, sprinkle them over the batter and whisk the ingredients together gently but thoroughly.

   Warm a large heavy griddle over moderate heat until a drop of water flicked onto it splutters and evaporates instantly. Grease the griddle lightly with a pastry brush dipped in the melted butter.

   Fry five or six pancakes at a time, leaving enough space between them so that they can spread into 2-inch rounds. For each pancake, pour about 2 tablespoons of the batter onto the griddle and fry for about a minute until small, scattered bubbles have formed and begin to break on the surface. Immediately, turn the pancake with a wide metal spatula and cook for a minute, until the bottom is golden brown.

   Stack the finished pancakes on a heated plate. Then repeat the procedure, brushing the griddle with melted butter when necessary, until all the sourdough pancakes are cooked. Serve the pancakes at once, accompanied by butter and maple syrup, honey or jam.
