Pickled Shrimp
To make about 2 quarts
2 pounds medium-sized raw shrimp (about 21 to 25 to the pound)
1 large onion, peeled, cut crosswise into 1/4 – inch thick slices and separated into rings
2 lemons, cut crosswise into 1/8 – inch thick slices
A 1-inch piece of fresh ginger root, scraped and cut into paper-thin slices
1/4 cup finely chopped fresh parsley
4 small bay leaves
2 cups cider vinegar
2 tablespoons mixed pickling spice
1/2 teaspoon dry mustard
1/4 teaspoon ground mace
2 teaspoons salt
1/2 cup olive oil, combined with 1/2 cup vegetable oil

   Shell the shrimp. Devein them by making a shallow incision down their backs with a small sharp knife and lifting out the black or white intestinal vein with the point of the knife. Drop the shrimp into enough lightly salted boiling water to immerse them completely and boil briskly, uncovered for about 3 minutes, or until they are firm and pink. Drain the shrimp, spread them on paper towels and pat them completely dry with fresh paper towels.

   Place the shrimp in a deep bowl, add the onion rings, lemon slices, ginger root and parsley, and toss them together gently but thoroughly. Transfer the mixture to two wide-mouthed quart jars, dividing it evenly between them. Tuck 2 bay leaves down the sides of each jar.

   Combine the vinegar, pickling spice, mustard, mace and salt in a 1- to 1 1/2 quart enameled or stainless-steel saucepan and bring to a boil over high heat, stirring until the mustard and salt dissolve completely. At once pour the hot spiced liquid over the shrimp mixture by the tablespoonful. Allow each spoonful of liquid to flow completely through to the bottom of the jars before adding more.

   To make the jars of pickled shrimp airtight, place a tablespoon upside down in the top of each jar and very slowly pour the olive-and-vegetable-oil mixture over the back of the spoon, letting it trickle off onto the top of the shrimp. Cover the jars with their lids and chill the shrimp for at least 24 hours before serving. (Tightly covered and refrigerated, the shrimp can safely be kept for about 1 month. )
