Oven-fried Chicken
To serve 12 to 16
Four 2 1/2- to 3-pound chickens, each cut into 8 pieces
2 tablespoons salt
2 tablespoons paprika
Freshly ground black pepper
8 tablespoons (1 quarter-pound stick) unsalted butter, cut into bits

   Fried chicken is the mainstay of a southern church supper or family reunion , but frying enough chicken for a crowd can be tedious and time consuming. The following recipe can be used where large quantities of chicken are required; although the birds are baked in the oven, their texture and flavor are similar to those of fried chicken.

   Preheat the oven to 400°. Wash the chicken pieces under cold running water and pat them thoroughly dry with paper towels. Sprinkle the pieces on all sides with the salt, paprika and several grindings of black pepper. Spread the pieces out in one layer in one or more shallow baking pans. Scatter half of the butter bits evenly over the chicken and cover the pan or pans securely with a large sheet of aluminum foil. Bake in the center of the oven for 20 minutes, then remove the foil, raise the oven temperature to 450°, and bake undisturbed for 30 minutes longer. Turn over the chicken pieces with tongs, sprinkle with the remaining butter bits, and bake uncovered for an additional 30 minutes. Serve the chicken either hot or at room temperature, accompanied, if you like, by potato salad or coleslaw with boiled dressing (Recipe Index ).
