Mushroom and Potato Soup
To serve 8 to 10
6 tablespoons butter
1 1/2 pounds firm fresh mushrooms, wiped with a dampened towel, trimmed, and cut lengthwise, including the stems, into 1/8-inch-thick slices
1 cup finely chopped onions
6 cups chicken stock, fresh or canned
6 small boiling potatoes (about 1 1/2 pounds), peeled and cut into 1/4-inch slices
1 teaspoon salt
1/4 cup finely chopped celery
1/4 cup finely chopped scallions, including the green tops
2 tbsps PARSLEY,FRSH
1 cup SOUR CREAM,REDUCED FAT
1 tablespoon finely cut fresh dill leaves
2 dashs Pepper - Black

   In a heavy 4- to 5-quart enameled or stainless-steel casserole, melt 4 tablespoons of the butter over moderate heat. When the foam begins to subside, add the mushrooms and onions, and stir until they are evenly coated with the butter. Reduce the heat to low, partially cover the casserole, and simmer for 20 minutes.

   Stir in the chicken stock, potato slices and salt, and bring the mixture to a boil over high heat. Reduce the heat to low, cover partially, and simmer for about 25 minutes longer, or until the potato slices are tender but still intact.

   Meanwhile, melt the remaining 2 tablespoons of butter in a heavy 8- to 10-inch skillet. When the foam begins to subside, add the celery, scallions and parsley and, stirring frequently, cook uncovered over low heat for about 15 minutes, until the celery is tender but not brown.

   In a small bowl, combine the sour cream with about 1/2 cup of the simmering mushroom soup stock and mix well. Stirring constantly, pour the sour-cream mixture into the skillet gradually and bring the mixture to a boil over high heat.

   Add the entire contents of the skillet to the mushroom soup and stir together gently but thoroughly. Taste for seasoning. Then pour the soup into a heated tureen or individual soup plates, sprinkle with the dill and a few grindings of pepper, and serve at once.
